i thought this would be gross but I tried it at a restaurant and it was actually really good: fried rice dressing balls. They made rice dressing, put in fridge to tighten, made balls about the size of ping pong balls, rolled them in bread crumbs and flash fried.

I do them all the time. You'll have to determine your level of fried. Play around with it. I'm glad 8 come to a pack.
