Maybe you just haven't paid attention because you don't have an interest in her? since my wife had me watching her on American Idol her weight has gone up and down dramatically over and over.
Her wedding was her last big lifetime event. Women who struggle with their weight and can then claim the baby put it on them don't tend to take it off.
Also, the wedding picture is probably about the most flattering picture possible from that day - and no doubt aided by spanx and other tricks of the fat female trade. She'll be pointing to that picture and the skinny pictures of her at 20 to her 7 year old a few years from now telling it "before mommy had you I was skinny"
ETA: thinking about it and with the history of magazines altering/photo-shopping celebrity pictures I doubt the wedding picture is unaltered. If you show me a video clip with her moving around like a skinny person that recent I'll recant and admit she really put on more than 80 or 100 pounds with just eating and getting pregnant.
The other inconsistent thing? All this talk from her attacking people who notice her weight as "body shaming". OK, if that's how you feel about it then why all the nonsense about your fiance inspiring you to be healthier and lose weight? You (and Oprah, and other famous women who gain weight) can't have it both ways. You can't be happily congratulated on your weight loss and lash out at people who notice your weight gain.
