Stay on the North Carolina / Blue Ridge side and you cant go wrong. Way less touristy and trashy then the crap show that is Pigeon Forge / Gatlinburg

That's kinda the plan. However, I don't think I can go to the Smoky Mountains without hitting up Cades Cove. Also, I've never actually been to Clingman's Dome. I'd like to see that as well.
Doing a little bit of browsing while I can here at work, I came across this place near Highlands, NC. Dry Falls.

Right off of the side of the road. This is exactly the type of things we'll be looking for with 2 small kids. My wife is no fan of laborious hiking either.

I'm starting to think that we might do a "road trip with frequent stops" type of vacation. I'd like to at least have some sort of plan in place. But I'll be willing to call an audible if necessary.

Leave the kids at Grandma's for the weekend. You and wife get a nice nature getaway.
Maybe for a weekend, but not for a whole week. My wife wouldn't go for that.
