I think it's a country thing.
The other thing that I've seen them do is chop sunny side up eggs until you can't see they're eggs anymore, mix them into the bowl of grits, and add their sugar.

My grandpa used to make grits and eggs but they werent sunny side up and I dont recall any sugar. Just a ton of butter and salt and pepper. I never did learn exactly how he made the eggs though.
