Easy material and the student pool is Male biased which decreases the amount of competition in the field, and being that it's blue collar stigma, keeps the nerds away.
1. Good money
2. Girls not interested in it(fewer graduates to compete with) (gender biased professions have had higher earnings)
3. Material is stuff blue collar people deal with so it's not over your head if you have an IQ over 100
4. Being the stigma surrounding the industry is of a "worker" profession, college elitists tend to choose majors that they consider more "professional"(business,accounting, etc) further decreasing competition.

Very true. If you are working in production then Engineering (if you have the time and aptitude) or Supply-Chain management (logistics) are your best bets.

I'm leaning heavily toward Accounting (about 1.5 yrs away from finishing the degree) or switching to Occupational Health/Industrial Hygiene.

What was your MOS?
What state are you from and going to?
Curious to know because I'm getting out soon as well.
I don't know when I'm getting out yet. I'm at 10 years and SSgt. I'm on a medical board, waiting for my findings.
I was in Aviation (5 Years QA experience)but also did Recruiting so I want to stick with a Business Field/Degree.
I'm from Ilinois originally and headed back to Illinois to take advantage of the Illinois Veterans Grant ( pays full cost for a bachelors ) & I will use my Montgomery instead of Post 9/11 due to $1790 for Montgomery instead of BAH for small town central Illinois.
