I was just going to fine chop them and use it as a garnish, kinda in place of parsley

I don't know, every time I chop them off I feel like I'm wasting them, though they do end up in my compost bin

Even as a garnish, it's a flavor I don't particularly like. No need to feel guilty for tossing parts you don't like...I wouldn't feel bad at all leaving broccoli flowers for the bees. They need to eat, too...and those brassica flowers are way too pungent for me.

If I had those ingredients, I'd take a completely different approach (and wouldn't bother with the quinoa, as I think it tastes like styrofoam packing peanuts). Cook the purplehull peas with a little smoked meat (or substitute smoked mushrooms, if you're vegan) and serve over rice (quinoa) as the entree, roast the parsnips & carrots as a side, and feed the carrot tops & broccoli flowers to the neighbor's chickens.

Or make a simple root veg stew w/peas, a little tomato, and plenty of garlic & onions, & serve over quinoa.

I would not apply the word jambalaya to "any old thing mixed w/a rice or grain".
