re: Freezing fresh shrimp - why do you remove the head (and are they ruined)?

You ever seen those little white signs with the red letters outside stores that say "Gulf Shrimp in Store $5.99/lb"? They are all over LA, even at some gas stations. Those are frozen head-on gulf shrimp. I've bought them, ate them, and didn't think they were bad. So I think you're good.
