I agree with this. But they didn't have to see the video. Just the existence of it and alluding to it would be enough. You even see Kim laughing at this.
It's almost like Jimmy turned into Saul the moment he made Dan make that video. It comes across like he just wanted to punk out the guy and watch him humiliate himself. And Kim picked up on it too. Once she realized he made the video is when she immediately changed her demeanor about it. She blames it on the fabrication of evidence but you can see she thinks Jimmy was a bit dark carrying it out.

You're right, it's very likely the explanation would have satisfied the detectives and the investigation would have been dropped. I'm not certain Jimmy made the guy sit on a pie in order to humiliate him though, given that Jimmy only met him prior to the interview.
Some people can toss a lit cigarette on the ground and walk away. Jimmy seems to have a need to grind that thing out and that need shows up in a lot of what he does.

I see Saul as being the "morally flexible" middle ground between Jimmy and Slippin' Jimmy. He became Saul when he was talking to the police, but it was Slippin' Jimmy that wanted the video made, and scammed Ken into picking up the bar tab. Like his boss playing guitar, Slippin' Jimmy is how he blows off steam.
