Yes...the immune system sees the protein as a invader and elicits a defense to destroy it (which may be localized or systemic). With that being said, it may result from late introduction or by a change in the immunoresponse to the protein. There are people who will eat a food for years with no symptoms, then will eat it one time and will experience a hypersensitive response.
