Chicken and sausage gumbo. Had to two time it. Got the first roux really dark with no black flakes. Patted myself on the back. Tasted it after adding to stock. It was GROSS. Had to re-do. Didn't go so dark. Came out great. Note to self. Don't go over-the-top
