Wireless Printer, Fax, Copier

I have a small office environment.
Probably only print 20-40 pages per week.
Not sure if I should get inkjet or toner machine, or some other technology.
I'm guessing most machines these days print via wireless, true?
Any suggestions? Is this a "just go to office depot and get what they got" purchase?

Yes.
HP8600 series. Stay away from their "Envy" line of printers though. Complete crap.

When my wife was in med school and printing a good bit of paper, we bought the Epson WorkForce Pro WP-4530 Color Ink-jet and it has performed flawlessly. The cartridges last a long time and the wireless printing works even from downstairs or across the house. No qualms at all with it.

If you're printing 20-40 pages per week on a consistent basis, you can get by with an inkjet. It's the inconsistent printing habits that make inkjets problematic, where you might go 2 weeks to a month without using the ink cartridges. Some of the ink tends to dry up, clog the printheads, and sometimes requires deep cleaning if not a full cartridge replacement. Can be a pain in the arse to spend 20 minutes just so the printer can spit out 1 page.
Laser printers, on the other hand, have a higher initial cost and higher but less frequent maintenance costs (cost per page is generally a good bit lower than inkjet). And you can go a month without using it and each page will print as well as the last.

Yeah, if you don't need to print specialty media (card stock, photo paper, large format, etc.), a color laser all-in-one printer in the $300-400 range would be good and reliable. They handle normal paper (and even heavy duty 24lb. presentation style paper or resume paper), but some in this price range tend to have tighter tolerances and produce inconsistent results with unconventional paper formats. In general, the less you expect of a home-office printer, the happier you'll be.

I'll second the Epson Workforce. I think we also have the 2450, but it's very convenient to be able to scan directly to a flash drive.
