I'm abstaining on Spiderman
Hulk is tough, because I like every one of them. Each brought something to the part:
Bana - a certain lost passion that I think is appropriate
Bixby - wit and wisdom
Norton - an intensity that is appropriate - but a little too rational
Ruffalo - that comic book reluctance of Banner to lose himself to the beast - he also has a certain amount of wit and restrained passion
Bana, slightly, because I think the picture suffers so badly from Nolte - and still he shined through - the best Hulk scene (aside from "Puny God.") in any of the movies is Bana describing the rage, the freedom, his heart beating and then him remembering he killed the dogs - that is one of the best scenes from any comic book movie - ever. He gets the Hulk nod from me based primarily on that scene (and him describing how transforming to the Hulk was like being born again.)
