Not trying to be "that person," but I'm willing to bet I know more about this subject (kitchen knives) than maybe anyone on this board - and certainly on this thread.

It's a big hobby of mine - looking to get into making/selling custom knives on the side. I have to get better at sharpening though (long process - I'm not quite there yet).
