You'd have to go out your way to dry out a Boston Butt pork roast. That thing is loaded with fat.
Look at it this way. I smoke my Boston Butts for several hours at 250 degrees then pull it off the smoker, place it in a covered roaster with some of the juice from the drip pan of the smoker and finish it off like that and it is never dry.
