Depends on the size/length of the tracks but one of the first things I learned was if you gouge, pick up the blade and back drag to fill the gouge right then or when the front of your tracks hit the gouge, you'll gouge again.
Blade control takes a lot of practice. Keep the blade angled while your learning, it will make it much easier for you and the gouges won't affect you as much. Keep rolling dirt one way then come back and roll it the other way.
