If you want something quick and delicious, take 2 pounds of the small ones, and buy some of the Red Runner shrimp bisque in a can. SHould be at all grocery scores. Shake, open, and pour into pot. Bring to boil, drop in shrimp, cook and stir for only like 10 minutes, and serve over rice. I swear that stuff is as good as you could make from scratch.

I have 4 lbs of 31-34, 4 lbs of 16-20, and 2 lbs 9-12

Probably gonna dehead and peel them all today and make a stock from the shells.

Freeze what I'm not immediately gonna cook.
Whether you freeze them with shells on or off shouldn't make differnence right?
