I'm not a fan of all inclusive because I like to get out and explore. All inclusive will keep you at the resort the entire time unless you want to pay additional for meals you have already paid for.

That said, I stayed at Now Sapphire in Puerto Morales in December and it was great. I was there for Closer to the Sun so I didn't mind the all inclusive as I wasn't leaving the resort anyway. Beach was nice, water wasn't as clear as I expected.
If you're into diving, the reef is right there. We took a boat right off the beach and straight out to the reef. Again, visibility wasn't what I hoped for, but it could have been the time of year too. I was on Isla Mujeres 2 days prior and the water there was pristine and it's only a few miles away.

All in all, we had a great time. Food was comparable to a cruise, nothing great. Drinks were good and the bar tenders poured well. They didn't have Crown, but they did have Johnny Walker.
