Are we watching the same show and reading the same books? Her dad's beheading and Joffrey's demented behavior didn't take her from being a passive, naive little girl who still harbored fantasies of the white knight riding to her rescue to a grown woman, cold and hard to the world that she needs to be to compete in the Game of Thrones. Littlefinger had started to open her eyes and her psychological torture gave her some flavor of how cold she would have to be, but the final vestige of her innocence has been ripped from her now. There is no more fantasy for her to cling to. She must now do what is necessary to survive and get revenge or she will die. It should be clear as day to her now.

So the previous 27 horrible opportunities didn't give her that epiphany?
In the books, I think it happens after bitch lady is thrown through the hole.
ETA:
Also, I don't find Theon a sympathetic character. He has created his own destiny, much like Eddard and Catelyn. Sansa and Arya have had things happen to them. While Arya has decided to take hold of her own destiny, Sansa has yet to do so. Which makes her a less sympathetic character to me.
