Bread ideas

I eat a lot of French bread as a side. Most often, I bake slices with olive oil, garlic and shredded Parmesan. I sometimes add more seasons to it like parsley, oregano, dried basil, or cracked pepper. I sometimes have added finely diced tomato and black olives. Bored with it and need something new. Anything you do different to add some pop to the daily bread?

Think mini-pizzas. Add some pizza sauce and toppings you like.
Perhaps some pesto sauce.
Perhaps some grilled bell peppers.
Look for Crostino and Bruschetta recipes.

Not really different, but sometimes, I brush the slices (cut on the bias) with olive oil, season and grill.

This just hit me...
Saute some diced mushrooms in butter.
Add chopped spinach.
Simmer down.
Add heavy cream
Salt and Pepper
Reduce to thicken.
Use to top your toasted and oiled (or buttered) bread.
Sprinkle some Parmesan cheese on top.
