I have never had a table that is unsanded damage my clothing. Can you explain this?
When a woman sits at a table with an unsanded underside, as soon as she crosses her legs, her stockings or pantyhose get pulls on them. This will also happen to sweater fabric, silk, etc.

My legs never rub against the underside of a table. You must have fat legs.

I completely understand this since I am woman. And, normally, the unsanded underparts are not in restaurants with cloth napkins which can provide some clothing protection. Sorry, he's got an abc gum problem. I would think you could expect to have to clean the underside of your tables in casual joints. Just one of those things based on the mix of clientele. He's much more concerned with the gum on his tables than he is about his customers, apparently. That's what that tells me.
I don't mind owners defending themselves. It's all in the delivery, though, by both the person critiquing and the owner. Same as on this board. You certainly don't have to like what someone else eats or does and you may certainly express that and perhaps offer suggestions if you like (which is a good thing here), but it's only going to matter if the delivery is appropriate. The substance is otherwise lost. Telling people their dishes looks like shitavo or something similar doesn't do anything but tick people off and turn a thread into a shitavo fest. This owner is a perfect example of that. He's turned most people in this thread off completely. He's turned me off, for sure, not that I would be headed there in the first place.
I think he could have made very valid points about the cost of the sandwiches, quality of ingredients and the value of the drinks and why he can low price those, but most of that was lost with his table explanation which made him look downright silly, to me, anyway. Atmosphere is a matter of taste and some of it depends on the type of place the owner intends. For some it won't matter and for others, it may.
This guy needs to be less sensitive about critiques and more sensitive about customers. His first sentence is obnoxious and slamming other places in his defense is not impressive. If I were him, I'd go back and delete that entire post.
I do think it would be interesting for him to see this thread. He might be enlightened or maybe not. I'm not sure he's salvageable.
tl/dr

Well I read 5 pages and got bored. My question is who the hell wears stockings or pantyhose these days?
