pretty much sold on the white subway tile and possibly gray grout to make it stand out. not sure about matte vs glass or gloss.
i guess i should buy a few tiles & play with them

Boy, do I disagree w/that one. I have white, matte subway all over the place, and SS appliances. The stainless steel hood exterior is a bitch; it shows every little streak and wipe mark, visible from the next room as if highlighted. The matte subway can be scrubbed w/a magic eraser, some BKF (barkeeper's friend) or vinegar, and it looks great without polishing. Hood, dishwasher, fridge, stove, ie, anything stainless, requires actual polishing after it is cleaned.
