So can someone tell me if there is a basic rule of thumb for these games in this regard? When I played Dark Souls I just pumped a lot into strength until it got to 40. I'd like to go back and play Demon's Souls since I got it free on PS+ over a year ago.

Read manuals and guides IMO. Demon's Souls doesn't teach you anything in game.

It's the same philosophy, but you don't have to pump up any stat that high on NG, especially with Demon's Souls. If I were you, I'd just roll with a magic character; it was the most fun I had with the game. The opening boss is supposed to kill you. Most of the bosses in Demon's are a joke.
