Depending on how big you buy them they can be tricky to cook all the way through with the bone.

I would suggest steaming them first and then frying them. Ensures it is cooked all the way through, tender, and gives great crispy skin.

Interesting. May try that next time.

I just keep the skin on and fry for 7 minutes. (Brine first, obviously)
