It definitely happens- my wife's best friend cooked a shrimp and corn soup for dinner for us about 5-6 years ago. We all ate it that night and enjoyed it. She (the friend) heated up the leftovers 1-2 days later and her throat closed up. That was the first I had heard of it, but I keep hearing more and more stories about it. Luckily for her, I think hers was just shrimp and not all shellfish.
