Developing allergies later in life

My daughter (Soph at Indiana U) had a reaction to BBQ shrimp on Christmas Eve. I had to take her to the ER. Her lips swoll so big it was hard to look at her without laughing (laughing didn't help the situation). They gave her steroid and antihistimine shots which worked.
She sees an alergist today and he says she is allergic to all shell fish. She has eaten shrimp since she was a year old with no reaction. How does allergies like this pop up late in life? She had a basket of fried shrimp this Summer while we were in Laffy town visiting the family. She had no reaction.

I'm no expert, but I've grown out of some and into others. Wish I knew how to stop it.

I developed allergies around 24, I attribute it a pos corpsman that never logged My flu shot for like 6 months and subsequently causing me to get one like 6 months in a row. Went to an allergist and got injections for like 2 or 3 years and just quit going. Nothing got better. I have very very mild allergies, just itching and a zyrtec every now and the takes care of it. It was bad at first though. I think the injections helped, but the they started giving me them for things they said I was allergic to, but I never noticed so I quit.

I was in my mid 40s when I first had an extremely violent allergic reaction to a horse. I had had many encounters with horses as a youth and young adult with no ill effects.
ETA: Just to clarify: I was not eating horse, just touching them, and breathing horse dander.

same thing happened to one of my hunting buddies...he ate shellfish his whole life without a problem and suddenly he has major allergies to them...apparently, it it not that uncommon for allergies to just show up one day...

I grew up on the middle of the country and now I'm alergic to some tree pollen and grasses. Strange very strange. Since I was in and around them my entire childhood.

I developed allergies to some things when I was around 20. Couldn't figure out why I was getting sick all the time. Got allergy tested and ended up being allergic to multiple things

It's not fully understood, but I like to blame antibacterial soap and parents not letting their kids play in the mud.
