re: Whitetail deer "Dream" hunt question.

Lotta hate on here for s tx hunting, but you won't find terrain like it anywhere else in the US as well as the abundance of game you can hunt in addition to large whitetails. It will probably be high fenced, but once you get to thousands and thousands of acres its all pretty much the same. If you only have a weekend to squeeze this hunt into I would look into that. No experience with Giles Island, but have heard good things so I don't think you can go wrong with either.
