Would you consider this to be more a possibility of being a birth defect? Not meaning that in a condemning way but such as Down syndrome. Something that just happens to some babies.

No, because down syndrome is a direct genetic condition. You have three copies the chromosome 21, you have down's syndrome. Period. They have down's syndrome from the moment they are born.
All infants are asexual, so nobody is "born" gay, straight, bi, etc. It is clearly a combination of genetics (as evidenced by years of research and very convincing twin studies) and environment.
Now, the question of whether or not it is immoral cannot be answered by science. I don't believe that anything is inherently immoral because I see no evidence for such a thing, so I find the idea that homosexuality is immoral completely foreign.
