Jeezus....serve gumbo, etuoffee, po-boys, fried seafood/ catfish platter, a grilled fish with some sauce....bienville, simple creole or ponchatrain maybe....that's cajun to most of the world.....oh...and pastalaya! Cajun is like any other local food type that spreads to other parts of the world, it gets simplified and changes to fit local palettes and ingredients....ya know....like how cajun food evolved from african/Caribbean and french and whatever else.
