Looking for a cheap and easy proven Coq au vin recipe

I plan on using a $2.99 bottle of Whole Foods merlot, chicken thighs and drumsticks, frozen pearl onions, sliced portabella mushrooms, chicken stock, carrots, bay leaf, and thyme. I have never made this before and Im looking for something cheap, easy and hearty. TIA

Just make sure you use bone in chicken and you should be ok.
First point is dont ever buy pre-sliced mushrooms. You want whole button for this dish. And is it really that hard to slice a mushroom?
Brown bacon. Remove. Dust chicken with flour, salt, pepper. Sear. Remove. Add onions, carrots, and celery, maybe some garlic. Saute. Add in some bay leaf, tomato paste, thyme and a bottle red wine. Bring to a boil. Add back in chicken. Simmer until tender. Strain sauce and reduce. PLace chicken in pot with sauce. Add in pearl onions (blanch them or just chuck in frozen if pre cooked), some carrots that you blanched. Probably best to saute mushrooms in some butter, thyme and salt before adding to pot. Add bacon in last.
That will pretty much get you there, although it isnt a "traditional" coq au vin which needs a rooster, marinade time, and generals from Napoleon's army.
