i saw a show that the best wat to do it was to freeze it on plate for a few hours then wrap them in cellophane and put in zip locks. This prevents the release of the moisture in the steak forming that ice crust you see in ziplocks. I cant find the link right now.

I tried freezing first before my food saver, but the plastic wrap wouldn't adhere to the meat. I partially freeze before vac sealing, though.
