Now crawfish is where I can taste the difference. Shrimp I honestly couldn't tell at all. I've always found chinese crawfish to taste muddy.

Some you can, others you can't. It depends on how many chemicals they pumped into them.
You can always tell physically. If every shrimp on your plate is perfect, you're eating imports. Peeled and sized by hand to make every single one look the same. You can do that when have cheap labor.
Mechanically peeled domestic shrimp have imperfections from the process.
