Used Ford GT prices are crazy. They cost more than when they were new.

By a basic "appreciates in value" standard of collectibility, there are a ton of modern classics.
^^^ Definitely the GT, but also most other iconic supercars of the last 30 years...Bugatti EB110, Jaguar XJ220, Countach, McLaren F1... and especially F-Cars. The Enzo had a price tag of about $670,000 in 2002 and a delivery-mileage car now goes for almost $3 million.
