I've tried running SeaTools for Dos on a bootable drive, but as soon as i hook my HD back up, the crashing continued again

Well then, that's pretty strong evidence in favor of the hard drive shitting the bed. If you can completely narrow it down to 100% stability with hard drive unplugged, and consistent shittiness when the hard drive is connected, you pretty much have your answer. unless the SATA controller on the motherboard was causing the problem. That would be unlikely.
