Because once they got low enough to be spotted in Mordor I'd assume the whole party would be confronted by Nazgul and Orcs alike. No way they could just sneak in there without being seen.

Same reason why they wouldn't drop them off at the Lonely Mountain, presumably they want nothing to do with Smaug.

Plus let's assume they're like actual eagles, they have a limit to how high they can go.

Which is why it was meant to be so secret. At this time, the Nazgul are out doing Sauron's bidding and he's still building up his orc army.

Smaug was a real threat once they got low enough with his sight much, much better than an orc's.
