I'm not a huge fan of Batali in conversations about greatest living chef, but I find it hard to believe that he's a "hack" without skills or knowledge.
I would imagine the person who met him mistook his disinterest in communicating with them for ignorance.
I saw Peyton Manning at a bar one time and went up to talk football with him. He didn't really have much to say to me about football, so I'm pretty sure he's a hack without much knowledge of the game.
