Even if he tricks him, how is he going to finish Amazo off? It just seems like Loki could get off one shot, and then Amazo would destroy him.

See above. Thinking Loki actually shows up to the fight first is Problem #1.

Ok, but if Amazo's strength is in his ability to copy powers, if anyone can beat anyone with the same exact power set, it's Loki. Creativity man. It isn't strictly what Loki can do that's important, it's how he does it.
If I'm going to take a random pair of depowered heroes and/or villains and give them the same exact power set to fight it out, there are very very few characters I'd take over Loki in that case. Honestly.
