Ok, I busted out the old food saver again this weekend. I patted dry the filets then vacuumed them. I had my finger over the stop/seal button and as soon as it looked like most of the air was out, I hit seal so it wouldn't keep sucking the water out. Worked fine twice (only had to do two packs). No water in the tray. Hopefully it keeps up.

I don't understand what you're saying. You stop the sucking process before it's done? What water was it sucking out? I don't put water in the bags with fish. I sealed some over the weekend and just put the filets in the bag and let the machine vac and seal it.
You can also freeze the fish partially or totally on a baking sheet and vac seal it after that.

I use freezer ziplock bags and a straw to suck the air out. Zip in both edges and stick straw through remaining hole and suck. Zip hole as straw is removed. Works every time. Very reliable.
