Onion rings: slice purple onions thin and break into rings. I put them in a bowl of buttermilk, an egg, hot sauce (I use Louisiana), cayenne pepper and creole seasoning (I use Louisiana Creole Seasoning). Soak for a half hour or so.
Batter: I use all purpose flour and pancake batter (2 cups flour to 1/2 cup pancake batter). The pancake batter will be used in its dry form. Don't mix it up like your about to make pancakes. Season it with creole seasoning. You can easily do salt, black pepper, garlic powder, onion powder instead of creole seasoning if you want.
Batter the rings, dip back in buttermilk, batter again and set aside. Get grease hot. Fry. Munch.
