Haha, I've caught them on accident when fishing for reds. They won't drop it? I can deal with that I think. I'd really like to catch some of The Flounders.

They'll bite it, settle to the bottom, turn it sideways in their mouth, then start to eat it. Typically if I feel a bit I'll relax my rod, sometimes even let some slack, count to 30, and then set the hook. Even doing this I've still reeled some in that were only holding on by the tail of the jig and never had the hook in their mouth. Teaching myself to be patient was the toughest part about learning to target flounder.
