I consider Texas as it's own place. Not really "Southern" if you know what I mean. Plus Texas is kind of like Tennessee's science project. Tennessee natives Davy Crocket/the other Volunteers and Sam Houston started that thing. You are welcome, Texas.

As for Texas in the south, I've found this to be a good rule:
East of I-45 = South
West of I-45 = Southwest, or just "Texas."
The southwest really begins around Abilene/San Angelo.
This simple rule is generally true for culture, geography, weather, cuisine, accents, etc..
