My kids love the beach. We love to hang out with them at the beach. Mrs Cove and I also like to go out to dinner and have some time to ourselves during the week. I don't see the problem.
OP, I would pay her a few hundred for the week, plus all expenses.

Take care of her expenses and pay her the normal rate when u leave the kids with her to have a night out. Dont think u need to pay her for the full day since u will be watching the kids during the day.
