Start with a simple brine. Water, salt, sugar. Add to it as you wish for the flavors you want. Let the chicken sit in that for a half hour to an hour and the texture you get from the grill will be great. Use whatever rub, daub, or sauce you want when the chicken goes to the grill after you brine for the big flavors.
Just look up brining and what's involved and your grilled chicken goes up to 11.
