When I make pimiento cheese, I end up adding more pimiento than most recipes call for to get it to the taste I like. My portions are:

1 lb shredded sharp cheddar
1/2 lb shredded Colby jack
1/2 ib cream cheese
1 lb pimientos (four 4 oz jars, 3 drained)
liquid from one of the 4 oz jars of pimientos
A tbsp. of mayo (or 2)
dash of red pepper

The recipe posted is similar to Frank Stitt recipe that is my favorite, I am not a big mayo fan so the cream cheese helps. Its also great served on celery sticks and on pulled pork sandwich
