C'mon now nurse you knew I was joking.
It isn't appropriate in a professional setting but I would probably let it slide if I thought someone said it on accident. Raised in Louisiana and live in Texas now though.

If it was a waitress or bartender she was likely trying to be friendlier in hopes of a better tip.
I wouldn't get a male coworker fired if they called me "honey" at work but I would def pull him aside and tell him it's not cool.
