I hate this argument because it is incredibly simplistic and ignores the very reason that it was only a fellowship of 9 to escort the ring to Mt. Doom.
Sauron never thought that anyone would try to destroy the one ring. He thought that whoever had it would claim it for their own. If the fellowship had used the EAgles to fly into Mordor then Sauron would have seen it immediately, sent out the Nazgul to attempt to stop them and guarded the entrance to Mt. Doom. There is no way the ring would have been destroyed if they just flew into Mordor on the Eagles.

Your own comments defeat your own argument.
He would not have expected the destruction thus the eagles could easily have snuck in. He would not have seen it immediately as you claim because he was already looking elsewhere.
