If you want the best of the XMen, you have to go back to the original Claremont run (which would be 1975-ish to 1991-ish), especially the Claremont/Byrne years. This is great stuff like the Dark Phoenix Saga, the Days of Future Past, etc. It's 17 years worth of comic goodness.

Whedon's Astonishing X-Men is just as good.Messiah Complex/House of M is a great starting point.
