I don't think they use the OT as a blocking TE with Watson. The main reason they got him is because of the dual threat. SP will use a lot of 2 TE sets especially in the red zone. I do however think they will use the OT in short yardage situations. So going with two TE on the 53 is just not an option in my opinion.

FWIW, Saints used OT eligible a ton the Superbowl year with Shockey who has a very similar skill set to Watson. Plus don't be surprised to see Watson lineup at FB quite a bit.
Also seems like a nice way to transition Armstead into the NFL. Plus his athleticism seems to lead itself to OT eligible plays. I know if I was a DE I wouldn't want to see a 300+ monster w/ 4.65 speed coming around the edge at full speed.
