Bread-and-butter pickle recipe originally from Food Network website:

12 to 15 cups of sliced cucumber
3-4 thinly sliced onions
1/4 cups coarse salt
4-5 cups ice cubes
combine above ingredients, mix thoroughly, put in large bowl, cover with a plate and weigh it down to put pressure on pickle mixture. Let sit at room temp for about 3-4 hours.

while pickles are in brine, make syrup.

2 1/2 cups cider vinegar
2 1/2 cups sugar
3/4 tsp turmeric
1/2 tsp celery seed
1 tbs mustard seed

drain pickles, put in large pot with syrup mixture. Heat almost to boil (do not boil), remove from heat and set aside.

Fill sterilized pint jars with pickles, add 1 sliced hot banana pepper (Anaheim would work as well...using both tonight) and cover with syrup. Cap with seals and rings, heat in boiling water bath 10-12 minutes. Remove, let cool, tighten ring and store in cool, dark pantry. Pickles are edible the next day, but I usually wait at least a week. They are really good!

Add a couple of wild grape leaves per jar if you want them crisp.
