Those are both fine guns, although there're not many similarities between the other than the caliber. If you're set on 45 ACP for the caliber, I'd also suggest looking at the Kahr CW45 as well as Commander (4-4 1/4" barrel) sized 1911's. The three most active guns in my cc rotation are the Kahr CW45, an American Classic Commander 1911 and a Citadel Officer (3 1/2" barrel) 1911. The Kahr is a nice gun that frequently gets overlooked. It's light, accurate and a dream to carry. It has a true DOA type trigger and no external safety levers, both much different from the 1911. The Kimber you're looking at is fairly light for a 1911 since it has an alloy frame. I'd try and shoot a Commander sized 1911, as well. My Officer size 1911 is not noticeably easier to conceal than is the Commander.
As far as double stack mag vs. single stack mag guns, find out what YOU shoot best and handles best for you. Single stack mag guns are much easier for me to cc than double stack mag guns. My first cc gun was a Springfield XD 40. I didn't carry it long before realizing how much more I like the thinner single stacks.
Don't get the 1911 unless you're willing to adequately learn it's manual of arms.
As far as holsters, I use inside the waistband holsters to cc all my 45's. The hybrid holsters like Cross Breed are well liked by many, but I like leather. Get a tuckable holster for added versatility. I can personally recommend these leather holster makers:
Side Guard "Tuck Clip" LINK
"Lone Wolf-T" LINK
R. Grizzle "Southern Sidekick"LINK
Get a nice belt designed for holster carry. Wilderness Instructor is hard to beat for casual belts.

I'm not dead set on .45 but it's my preference. Took a look at the Kahr CW. Sleek pistol. Nothing to hang up on, though I won't be pocket carrying. Have to go back and look, don't remember if it was DAO??
Dad and I bought a Citadel but I haven't seen it yet. He lives in NC but said he loves the gun, though it's 5" barrel - too big for CC.
I think I prefer the Side Guard holster best out of the ones you posted. Just need to go and try them on.
