They're not on that map. Here's a map with them:
Do you see that big river that forks alot on the Eastern Continent? The Free Cities are located around there, and a bit to the West of it as well on the Western Shore. They point out Pentos for you, which is one of the Free Cities.
As for where Dany is, do you see the big bay at the bottom of the same continent above the Gulf of Grief? That's Slaver's Bay and where she is this season. So she's still a long way away from Westeros.

I feel like Essos is supposed to be Africa but they refuse to say it. Bunch of backward roughneck customs/traditions.

They've got Africa accounted for. There's another continent called Sothoros, that is renowned for being barbaric and having extremely dangerous animals. Essos is kinda a mix between Europe and Asia. The Dothraki is certainly inspired by the Mongolians, Slaver's Bay is influenced by Egypt and the Middle East, and Qarth is a spice port.

I'm just 100 pages into Book 2. They discuss all this in the later books?

Sort of. Sothoros is more straight from GRRM's mouth to where I don't expect anything to come out of it. I think you could figure out what inspired the Dothraki and Slaver's Bay.

Seasons 1 and 2 were, but they're getting more liberal with it now. Book 3 will take up two seasons, and I won't go into any more detail from here.
